Cajun Pork Roast

1 Pork shoulder roast, or other cut
2 tbls. each: salt, pepper, garlic, hot peppers, and olive oil
1 bottle Tiger SauceŽ


Cut garlic and peppers into slivers.

Stab roast deeply with knife and insert pieces of garlic and hot peppers into holes all over. Rub all over with salt and pepper. Place in zip lock bag & pour Tiger Sauce all over.

Marinate overnight.

Roast at 325° F. for at least three hours, or longer, depending on size of roast, until very tender. Slice up and serve.

Can also be done in the crockpot.

Note: Try roast cold and shredded next day for sandwiches with coleslaw.
