Pork Chops with Sauerkraut

2 tsp. olive oil
4 pork chops, trimmed of fat
1 large sweet onion, peeled and cut into 4 slices crosswise
1 (14 to 16 oz.) can sauerkraut, rinsed and drained
1/2 cup apple juice or cider


Heat olive oil in a saute pan and add pork chops. Top each chop with one onion slice, then divide sauerkraut among chops, piling it on top. Pour apple juice over chops, cover and cook over low-medium heat for 1 hour for thick chops, slightly less if chops are thin.

Horseradish Applesauce:
Combine jarred applesauce and grated horseradish to taste. The applesauce can be served at room temperature or warmed slightly in the microwave.
