Pork in Mustard Sauce

4 boneless pork chops -- about 2 lbs.
2 tablespoons butter or margarine
salt and pepper
2 to 3 tbl. Dijon mustard
1/4 cup chopped onion
1 1/2 teaspoons minced fresh tarragon or 1/2 tsp. dried
Hot cooked noodles
3/4 cup sour cream
1 teaspoon browning sauce -- optional


In a large skillet, brown chops on both sides in butter. Season with salt and pepper. Add mustard, onion and tarragon; cook and simmer for 10-12 minutes or until pork is no longer pink.

Remove chops to a platter of noodles and keep warm.

To the skillet, add sour cream and browning sauce if desired; heat through (do not boil). Spoon over pork and noodles.
