City Chicken
2 pounds boneless pork, cut into 1 1/2 - 2 inch cubes
1/2 cup flour
1/2 tsp. garlic salt
1/4 tsp. pepper
1/4 cup butter
3 Tbs. vegetable oil
1 envelope Lipton onion soup mix
1 (14 1/2 oz.) can chicken broth
1 cup water
Hot mashed potatoes, noodles or rice
Combine flour, garlic salt and pepper in plastic bag or small bowl. Roll pork pieces in flour mixture until coated.
In a large skillet, heat butter and oil over medium/medium high heat. Brown pork pieces, turning frequently; drain. Sprinkle soup mix over pork pieces. Add broth and water. Reduce heat; cover and simmer for about 1 hour or until tender.
Remove meat and keep warm. Thicken pan juices as for gravy and serve over mashed potatoes, noodles or rice.
Yields 4-5 servings
