Green Peppers with Ham Rice Stuffing

4 large green peppers
2 cups ground ham
1 cup cooked rice
1/4 pound cheddar cheese, sliced into 8 slices
1/2 cup butter or margarine
2 tbl. minced onion
1/4 tsp. dry mustard
1/4 tsp. garlic salt
1 1/2 cups tomato juice


Preheat oven to 350 degrees F.

Rinse and cut peppers into halves lengthwise. Remove seeds, stem and rinse. Drop pepper halves in boiling salted water to cover and simmer 5 minutes. Remove peppers from water and invert. Set aside to drain.

While peppers are cooking, grind and set aside enough cooked ham to yeld 2 cups ground cooked ham.

Prepare rice to yield 1 cup cooked. Meanwhile slice into 8 slices and set aside 1/4 pound cheddar cheese.

Melt in saucepan 1/2 cup butter or margarine. Add ham and toss lightly with fork to blend. Blend in rice and minced onion. Mix and blend in dry mustard and garlic salt.

Lightly fill peppers with ham rice mixture, heaping slightly. Place one slice cheese on top of each pepper. Place peppers in baking dish. Pour around peppers tomato juice.

Bake at 350 degrees about 20 minutes. Increase heat to 400 degrees and bake 10 minutes longer or til cheese is lightly browned.

Spoon hot tomato juice over stuffed peppers and serve. 4 servings.
