2 teaspoons black pepper
1 1/2 teaspoons salt
1 teaspoon white pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon thyme
1/2 teaspoon dry mustard
3 tablespoons butter
1 tablespoon vegetable oil
1/2 cup onion -- chopped
1/2 cup green pepper -- chopped
1 teaspoon garlic -- minced
4 pounds boneless pork loin


Preheat oven to 275 degrees F. Thoroughly combine spices. In a large skillet melt butter and oil, add veggies, garlic, and spices. Saute for 4 minutes. Stir over medium high heat an mix continuously. Cool.

Place roast in a baking dish fat side up. Make several slits in the meat to form pockets, stuff with sauteed mixture, rub remaining over roast. Bake uncovered at 275 degrees for 3 hours, then turn heat up to 425 till meat is dark on top, about 5-10 minutes.
