Maple-Mustard Glazed Pork Roast

2 to 3 pounds boneless pork loin roast
2/3 cup maple syrup or maple flavored syrup
3 Tbl. Dijon-style mustard
2 Tbl. cider vinegar
2 Tbl. soy sauce
salt and pepper


Preheat oven to 350 degrees F.

Stir together maple syrup, mustard, vinegar, soy sauce, salt and pepper. Spread evenly over pork roast and place in a shallow pan that has been lined with foil. Roast in 350 degree oven until internal temperature of pork reaches 155 to 160 degrees, about 1 1/2 hours.

Be sure and line the pan with foil because otherwise the pan will be very hard to clean.
