Marlen's Luau Pork Chops

Oil for frying
4 pork loin chops, 1/2" thick
1 20 oz can pineapple slices in pineapple juice
Water
1/4 cup packed brown sugar
3 T soy sauce
2 T dry sherry
1 ts salt
1/2 ts ground ginger
1/4 ts black pepper
2 medium firm bananas, cut into 1-1/2 diagonal chunks


In a couple tablespoons of oil, over high heat, brown pork chops on both sides.

Into measuring cup, drain pineapple juice, and add water to make 1 cup. Reserve pineapple slices. To pineapple juice/water mixture, add brown sugar, soy sauce, sherry, salt, ginger and pepper. Pour over chops in skillet. Heat to boiling. Reduce heat to low. Cover and simmer about 35 minutes or until chops are tender, turning once. Add bananas and pineapple. Cook about 5 minutes until heated through. Makes 4 servings.
