Orange-Glazed Pork Roast with Raisin Sauce

1 (3 lb.) pork loin
1 c. orange juice
1/2 c. brown sugar, firmly packed
1/2 c. onion, chopped
1/2 c. celery, chopped
2 Tbsp. butter
1 1/2 c. Minute rice
1 c. hot water
1/2 c. raisins
1/2 c. nuts, chopped
1 1/2 tsp. salt
1/8 tsp. pepper


Bake pork at 350 degrees, about 2 1/2 hours.

Combine orange juice and sugar. Baste roast with 1 cup of mixture.

Saute onion and celery in butter. Mix with remaining ingredients. Add juice mixture. Stir well and pour over loin. Cover and bake last 20 minutes of roasting time. Serves 4 to 6.
