Oven Baked BBQ Pork Chops

4 center-cut pork chops -- trimmed of fat
1 tbsp vegetable oil
1/2 (28 oz) can crushed tomatoes
1/2 cup Somersize Ketchup -- or regular ketchup*
1 tbsp Sweet & Low Brown Sugar Subs.
2 tbsp Worcestershire sauce
2 tbsp Dijon mustard
1/2 tsp sea salt
1/4 tsp black pepper


Preheat oven to 350°F.

Preheat a stovetop grill (cast iron preferable). When hot, spread a bit of oil over it. Sprinkle chops with salt and pepper. Place on grill and cook until no longer pink on each side and middle looks pretty cooked. Drain on paper towels.

While waiting for grill to heat up, mix together tomatoes, ketchup, brown sugar subs, worcestershire sauce, mustard, salt and pepper. Mix it well. Place 1/2 of the mixture on the bottom of a 13x9" baking dish. Top with cooked chops. Top that with the remaining sauce.

Bake at 350°F for 20 minutes or so until the chops are no longer pink inside, yet still juicy. This should take 20 minutes the most.

Serve with Uncle Ben's Garlic Rice or something similar (if not Somersizing or not on a low carb plan). A green vegetable is good on the side too or a salad.
