Oven Barbecued Ribs

1/4 cup oil
3 to 4 lb. pork spareribs, cut into serving size pieces
1/2 cup chopped onion
1/3 cup chopped celery
1/4 cup grated carrot
1/3 cup catsup
1/4 cup packed brown sugar
1 tbsp. prepared mustard
1 1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. cayenne


Preheat to 350°.

Heat oil in a large skillet over medium-high heat, then add ribs. Brown ribs, then remove and set aside. Save 2 tbsp. drippings and discard rest.

Place ribs in a 9 x 13 baking dish, cover with foil and bake for 1 hour in preheated oven.

Meanwhile, heat reserved 2 tbsp. drippings in skillet. Add vegetables, saute over moderate heat until tender. Stir remaining ingredients and simmer about 5 minutes, stirring occasionally. Drain ribs.

Baste generously with sauce, cover with foil and bake for 30 to 60 minutes, or until tender.

Makes 4 servings.
