Pork: Pig Tails

Pig tails (well trimmed) enough to cover a large roasting pan one or two layers thick
liberal sprinkling of brown sugar
salt
8 - 12 peppercorns
3 bay leaves
onion sliced


Layer in large pan. Bake at 250°F for 4 - 5 hours Drain off excess fat after 2 - 3 hours

Pour BBQ sauce over tails and bake for the last 1 - 2 hours. Basting occasionally. Add a little water if/and when necessary. Be careful during the last hour not to let them burn and when they look nicely browned remove and enjoy.


BBQ sauce:
1 cup ketchup
1/4 cup brown sugar
1/4 cup Worcestershire sauce
2 tbsp. vinegar
a few dashes Tabasco sauce
2 cloves garlic, minced
1/2 teaspoon dry mustard (preferrable Keen's)
1/2 tsp. salt
1/4 tsp. pepper


Combine ingredients in saucepan, heat over low heat 5 minutes, stirring occasionally.

You can use commercially bought sauerkraut just add a few peppercorns and roast in the oven till desired tenderness. I like mine a little on the mushy side. Check your liquid level so it doesn't completely dry out.
