Pinchitos
1 lb. lean pork, cut in 3/4 to 1-inch cubes
6 Tbsp. olive oil
1/2 tsp. thyme
3/4 tsp. ground cumin
1 tsp. paprika
1 tsp. crushed red pepper
1 Tbsp. minced parsley
4 to 6 cloves garlic, crushed
salt
pepper
Mix all ingredients, except pork, in bowl. Add meat and stir to coat well. Cover and refrigerate overnight or for several hours.
Thread meat onto small skewers. Broil, or better still, grill over coals until well browned, but still juicy, basting with the marinade.
