Roasted Pork Loin

1/2 cup honey
1/4 cup white vinegar
2 Tablespoons chopped ginger
1 cup crushed pineapple (drained)
1/2 cup soy sauce
1 to 1 1/2 lbs. of pork loin or tenderloin


Preheat oven to 325° F.

Combine first five ingredients to make marinade, and marinate the pork in the refrigerator overnight.

Place pork in heavy-duty foil with the marinade. Seal foil securely, and place in a roasting pan in a preheated 325º oven for 11/2 hours.

During the last 30 minutes of cooking, open foil carefully and baste frequently with the marinade. Allow pork to rest 10 minutes before slicing and serving.

Serve with the marinade over rice or those curly noodles.
