Pork Tenderloin Thai-Style

1 lb. pork tenderloin, sliced 1/4” thick
1/2 cup sliced green onions, including tops
1 large red bell pepper, cut into julienne strips
3 Tblsp. soy sauce
3 Tblsp. dry sherry
1-1/2 Tblsp. snipped fresh cilantro
1-1/2 Tblsp. honey
2 tsp. curry powder
2 tsp. cornstarch
1-1/2 tsp. Oriental sesame oil
1 tsp. minced garlic
1/4 tsp. dried crushed red pepper
1/2 cup water
2 Tblsp. vegetable oil
3 cups cooked jasmine rice


Combine pork, green onions, and red bell pepper strips.

In small bowl, combine next 10 ingredients until smooth.

In wok or large skillet, heat oil over medium-high heat. Stir-fry pork mixture until most of pork is no longer pink (about 4-5 minutes). Stir in liquid; stir-fry until pork has cooked through and sauce has thickened (4-6 minutes). Serve over jasmine rice.

Serves 4.
