1 pound pork tenderloin, trimmed and cut into 1 inch cubes
2 fresh limes
1/4 cup soy sauce
1 teaspoon Turkish Oregano
1/2 teaspoon thyme
1/8 teaspoon cayenne pepper
1 teaspoon Minced Garlic rehydrated in 1 tablespoon
water
1/2 teaspoon Parsley (dried)
1 whole Turkish Bay Leaf
1 tablespoon canola oil
1 teaspoon brown sugar
2 medium onions, cut into 8 wedges each
2 medium tomatoes, seeded, each cut into 8 wedges
1 large red bell pepper, cut into large chunks
1 large green bell pepper, cut into large chunks


In a small mixing bowl, squeeze the juice from the limes and reserve the peels. Combine the lime juice, lime peels, soy sauce, oregano, thyme, cayenne, minced garlic, parsley, and bay leaf. Blend well. Place pork cubes in a plastic bag or non-metal bowl and pour lime mixture over the pork, turning to coat meat. Seal bag or cover the dish and let marinate for 30 minutes. Turn the pork over severla times.

Remove the lime peel and bay leaf from the marinade. Remove the pork from the marinade and reserve the marinade. Drain pork well.

Heat oil in a large skillet over high heat. Add brown sugar and stir until sugar is dissolved. Add pork cubes, cook and stir about 5 minutes or until pork is nicely browned. Reduce heat to medium low. Add onions, tomatoes, bell peppers, and reserved marinade. Simmer 10 to 15 minutes until pork is tender.
