Pork Roast

2 1/2 pounds pork roast -- boneless
1/2 teaspoon salt
3/4 teaspoon oregano
3/4 teaspoon thyme
1/4 teaspoon pepper
3 cloves garlic -- cut into slivers
2 tablespoons Dijon mustard
1 tablespoon vegetable oil


Preheat oven to 325 degrees F.

Cut small slits into pork roast. Mix together salt, oregano, thyme, and pepper. Add garlic cloves and coat them with spices.

Insert slivers of garlic into the pork. Rub any remaining spice mixture over the surface of the pork.

Combine mustard and vegetable oil. Brush half of the mixture over the meat. Place in roasting pan. Insert meat thermometer.

Roast uncovered 1 hour.

Brush remaining mixture over pork. Cook until mixture temperature reaches 170.
