Pungent Port Roast

5 lb. pork loin
1 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
3/4 cup dark brown sugar
1 teaspoon dry mustard
1/4 teaspoon ginger
2 tablespoons vinegar
1 teaspoon soy sauce


Preheat oven to 350. Sprinkle pork with salt and pepper; insert meat thermometer to center of meat. Bake in shallow roasting pan for 2 1/2 hours, or until thermometer reads 175. Remove all fat from drippings in pan.

Combine remaining ingredients as a glaze; spread all of it over pork. Roast pork about 1/2 hour or to 185 degrees, basting it occasionally with glaze from bottom of pan.

Remove pork to heated platter. Remove fat from drippings, bring to boil. Serve with pork. Serves 8-10.
