Short Cure for Pork

1/2 cup sugar
1 1/2 tablespoons Kosher salt
6 cups warm water


Stir together to dissolve salt and sugar and let cool. Marinate pork loin 48 to 72 hours. For pork loin chops 24 hour is enough. Season this with various flavors such as a couple of cloves of garlic, a chile or 2 and some bay leaf.
