McCall's Recipe
Spiced Bacon Twists

1 cup packed light brown sugar
2 tbsp. dry mustard
1/2 tsp. each ground cinnamon and nutmeg
1/4 tsp. cayenne pepper
1 lb. sliced bacon (23 or 24 strips)


Arrange oven racks in middle and bottom positions of oven. Preheat oven to 350*F. For easy cleanup, use 2 pieces of aluminum foil to line bottom of broiler pan and large(17x13-in.) baking sheet with sides. Place broiler-pan rack over broiler pan; place large metal cooling rack over aluminum foil-lined baking sheet.

On sheet of waxed paper, using your fingers, rub together brown sugar, dry mustard, ground cinnamon, ground nutmeg and cayenne until mixture is evenly blended.

Dip bacon strips into sugar mixture to coat evenly. Twist each bacon strip several times. Place 12 coated bacon strips on broiler-pan rack; place 11 or 12 coated bacon strips on cooling rack over baking sheet.

Place broiler pan on bottom rack in oven and baking sheet on middle rack in oven. Bake 15 minutes; reverse pans from top to bottom. Bake 15 minutes more or until bacon is almost crisp and sugar is bubbly.

Transfer bacon strips to piece of clean aluminum foil to cool to desired temperature. Serve warm or at room temperature.
