Pork Tonkatsu

Pork Tonkatsu

4 slices (1/2-inch thick) boned and trimmed pork loin, about 5 to 6 ounces each
Salt and pepper
Flour
2 eggs, beaten
2 cups panko (Japanese dried bread crumbs)*
Oil for deep frying
2 cups finely shredded cabbage
Tonkatsu sauce (bottled sauce similar to a steak sauce) **


Season pork slices with salt and pepper; dip both sides of pork in flour, then in beaten eggs. Dip pork into panko, pressing the crumbs to coat on both sides.

Pour oil into skillet to a depth of 2 inches. Heat oil until hot (about 350 degrees) and add pork, one or two pieces at a time, cooking on both sides until coating is golden and pork is cooked. Drain on paper towels.

To serve, arrange cabbage in four dinner plates, equally divided. Slice each piece of pork diagonally, into 3/4-inch slices. Arrange pork over cabbage to appear like the unsliced piece. Serve each portion with a small bowl of Tonkatsu sauce for dipping pork.

*Regular dried breadcrumbs can be substituted for the panko; however texture of the finished dish will not be as crisp and crunchy.

** If you can't find Tonkatsu sauce, use a mixture of ketchup and Worcestershire sauce
