Oven Fried Rabbit

1 fryer rabbit, cut up
1 cup flour
1 egg beaten slightly
Salt to taste
Pepper to taste
1/ to 3/4 cup of oil


Preheat oven to 325 degrees F.

Dip cut-up rabbit pieces in flour, then egg and then flour once more. Fry in deep fat until brown; place in covered pan and bake at 325 degrees until tender. To crisp remove cover last 10 to 15 minutes.



Oven Fried Rabbit #2

2 lbs. young fryer rabbit, cut up
1/2 tsp. salt or to taste
1/4 tsp. pepper
1 stick butter or margarine


Preheat oven to 400 degrees F.

Wash and dry rabbit meat. Dust with flour which was mixed with salt and pepper. Place in shallow baking pan and dot with butter or margarine. Bake in moderate oven 400 degrees about 20 minutes. Turn the pieces and bake about 20 minutes longer or until golden brown and tender.



Batter Fried Rabbit

1 fryer cut up
1/2 cup flour
1/2 cup milk
1 egg
Salt and pepper to taste


Preheat oven to 350 degrees F.

Mix batter of flour, milk, egg, salt and pepper; dip rabbit pieces in batter; brown in skillet. Bake in baking dish about 45 minutes at 350 degrees or until done.
