Rabbit

1 Rabbit
250 grmas bacon, diced.
1 carrot
1 onion
Stalk celery
Bay leaves, Thyme sprig, Sage, Rosemary.
2 tomatoes
Oil, salt, pepper, flour.
Chicken or vegetable stock
1 glass white wine or dry sherry


Cut the rabbit in pieces, flour lightly and sautee in the hot oil.

Put apart. In a pot put a little oil (1 tablespoon) and the diced bacon, and cook there the onion, the carrot, the celery stalk, all minced, and when the onion is clear add and the tomatoes diced and the spices. Let cook for some minutes and add the stock, wine, and the rabbit pieces. Let simmer about 1 hour and correct seasoning. If necessary add more liquid, and cook until tender.
