Sausage Stuffing Balls

1 lb. fresh pork sausage
1 (8 oz.) pkg. seasoned stuffing mix
3/4 cup hot water
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1 beaten egg
1/2 tsp. baking powder


Combine stuffing mix with hot water. Break sausage into small bits and add to moistened stuffing mix. Stir in onion, celery, egg and baking powder. Shape into balls using 1/4 cup or smaller for appetizers. Place on ungreased cookie sheet. Cover with foil. Bake at 325 for 15 minutes. Remove foil. Raise temperature at 350 degrees and bake for 25 minutes longer.

Makes 18 - 20 large balls or 60 - 70 small ones.
