Mock Chicken Almond Casserole

1 pound bulk sausage (such as Jimmy Dean)
1/2 cup chopped onion
1/2 green pepper, chopped (optional)
1 cup celery, chopped
1 pkg. dry chicken noodle soup mix, like Liptons
1/2 cup raw rice (regular or brown)
1/4 cup chopped or sliced almonds
3 cups water
1 teaspoon catsup
1 teaspoon Worcestershire


Preheat oven to 350° F.

Brown and drain sausage, fry onion, bell pepper, celery until limp. Place meat and veggies in a 2 - 3 quart casserole or a 9 x 13 pan. Add dry soup mix, raw rice, and almonds.

Mix together the water, catsup and Worcester sauce and pour over. Cover with foil and bake 1 1/4 hours in a 350 degree oven.

Can serve with a sauce made with 1 can cream of chicken soup and 1/4 can milk. However, we like it without the soup/sauce and just add a few drops of soy sauce to taste.
