Queso Fundido
4 medium fresh poblano chiles
1/2 pound chorizo
4 ounces Monterey Jack cheese
4 ounces fontinella, kasseri, or cheddar
Roast 4 poblano chiles; peel, seed and cut in 1/4 by 1/2 inch dice. (These are called "rajas.")
Remove chorizo from casings; saute until just cooked through, crumbling coarsely. Toss rajas with chorizo; place in a shallow lightly greased baking dish. Grate 4 oz each Monterey Jack and fontinella, kasseri or cheddar; sprinkle over chile mixture. Bake in 350 degree oven until cheese is bubbly, about 10 minutes. Serve immediately, preferably with tortillas or tortilla chips.
