Smoked Sausage Creole

1 1/2 lb. Italian sausage links, sliced and halved
2 tbl. Oil
1/4 cup Chopped onion
1/2 cup Diced bell pepper
1/2 cup Chopped celery
1/4 cup Sliced green olives
1 pkg. Spanish rice mix
10 oz. Can diced tomatoes and peppers
1/4 cup Water
1/8 tsp. Pepper
1/2 tsp. cayenne pepper or Louisiana Hot Sauce, optional


Saute' onion, bell pepper and celery in oil. Combine all ingredients in a large sauce pan. Bring to a boil while stirring well. Cover and simmer until liquid is absorbed, about 12 minutes.

Remove from stove and let stand 5 minutes before serving.
