German Sausage Chowder

1 pound fully cooked bratwurst or kielbasa, cut into 1/2 inch pieces
2 medium potatoes, peeled and chopped (2 cups)
1 medium onion, chopped (1/2 cup)
1 small head cabbage, shredded (4 cups)
3 cups milk
3 tablespoons all-purpose flour
1 cup shredded Swiss cheese (4 ounces)
snipped parsley or green onion tops


In a large saucepan or crock pot combine sausage, potatoes, onion, 11/2 teaspoons salt, and dash of pepper. Add 2 cups water. Bring to boil and reduce heat. Cover and simmer for 20 minutes or until potatoes are nearly tender (or until they fall apart). Stir in cabbage and cook 10 minutes more until vegetables are tender. Stir in 21/2 cups of milk. Blend remaining 1/2 cup of milk into flour; stir into soup. Cook and
stir until thickened and bubbly. Stir in cheese until melted. Garnish with parsley or green onion. Makes 6 servings.
