Sausage and Sauerkraut Supper

1 package of bulk pork sausage
1/4 cup or so of chopped onion
1 bag sauerkraut, drained
Leftover mashed potatoes (about 2 cups)
American cheese slices (about 4)

Preheat oven to 350° F.

Cut sausage in half (the pkg.) and break up one half in bottom of a greased 2-quart casserole or pan.

Sprinkle with the onion. Pour in the sauerkraut, then spread the mashed potatoes over that.

Then break up the remaining half of sausage and place on top the potatoes. Top with cheese slices and bake at 350 F. for about 45 minutes, or until sausage is done.
