Tongue by ramon
1 beef tongue
1 onion
celery
carrots
leeks
calf foot or beef joint with gristle
Wash tongue several times in cold water.
Place tongue in pot with remaining ingredients and bring to a boil, and let simmer for about 4 hours, until joints fall apart and tongue is tender.
Liquid should reduce by about a third.
Remove tongue, let cool and peel, removing also gristle and hard parts from base.
Strain broth and clarify if desired.
Put tongue in a deep dish, cover with broth and refrigerate.
Best if served at least one day after cooking. Can be eaten in sandwiches or as appetizer.
