Roast Veal with Cream and Paprika
Yield: 4 servings

1 large veal fillet for roasting (about 2 lbs.)
2 tbsp. paprika, divided
1/2 cup white wine
4 tbsp. butter
1 cup cream
salt and pepper
Steamed rice
Cooked string beans


Preheat oven to 400 F (or 180 C).

Season veal with salt and pepper. Transfer to a greased baking dish. Season generously with 1/2 of paprika, then coat well with butter.

Roast veal for 60 - 90 minutes, until medium-well. Turn off oven and remove roast veal.

Transfer drippings to a small sauce pan. Add wine, mix and bring to a quick boil. Stir in cream and other half of paprika and let it simmer for 1-2 minutes. Season with salt and pepper and thicken with some cornstarch diluted with water, if desired.

Pour sauce at bottom of a large serving dish. Place roast veal at center, then surround with steamed rice and green string beans.
