Veal Oscar
2 veal cutlets per serving
3 asparagus spears per serving
Swiss cheese
8 oz. crabmeat
3 Tbsp. flour
3 Tbsp. butter
heavy cream
1 to 2 oz. sherry or Marsala
1/2 tsp. salt
1/4 tsp. white pepper
Preheat oven to 350 degrees F.
Pound veal. Dip in flour, beaten egg and milk and again in flour. Saute until golden in vegetable oil. Set aside. Cook asparagus and drain well.
On baking sheet, place cutlets; top with 3 asparagus spears and Swiss cheese. Place in 350 degrees
oven to melt cheese.
Meanwhile, make sauce. Melt butter; add flour all at once, stirring vigorously. Add cream to make thick sauce. Add crabmeat and sherry, salt and pepper. Spoon over cutlets and serve with additional sauce on side.
