Venison: Crispy Deer Liver

Crispy Deer Liver

1 lb. liver
1 fresh egg
1 Tbsp. water
1 Tbsp. lemon juice
1 tsp. salt
3/4 cup fine cracker crumbs
2 Tbsp. bacon drippings


Beat egg and blend with water, lemon juice and salt. Dip slices of liver in crumbs, then in egg mixture and dip again in crumbs. Brown for five minutes on each side.

The secret of crispy liver is to dip fresh liver in cracker crumbs instead of flour before frying.
Delicious with beef liver too.
