Venison Liver
5-6 slices liver cut 1/2 in thick
1 or 2 medium size onions, sliced
5-6 slices bacon
salt and pepper to taste
2 cups milk
flour
Put slices of liver in the milk for about three hours. Remove from milk and pat dry. Fry the bacon slices.
Use the bacon grease to fry the onion til tender.
Salt and pepper the liver and dredge in flour. Slow fry the liver along with the onions. When liver is about done re-add the bacon to the pan. Add a bit of water (or beer) if needed to the pan, cover tightly and simmer about 10-15 minutes.
You can make a decent gravy from what is left in the pan too. Serve at once. A side dish of hash browns goes well with this.
