Barbecued Ground Hog
Source: Kentucky Kitchens, vol. 1

1 ground hog, dressed and cut into bite sized chunks
2 tbsp lard, approximately
barbecue sauce of choice


Brown meat in the lard in a heavy skillet. Drain. Pour BBQ sauce over meat making sure each piece is covered with sauce. Simmer on stove until meat is tender. Serve with favorite vegetables and bread
