Greek Gyros

2 lbs. ground lamb
2 crushed cloves of garlic
1/4 cup lemon juice
1 tsp dried mint
1 tsp oregano
1 tsp thyme
1 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1/4 cup snipped parsley


Combine lamb, garlic, lemon juice, mint, oregano, thyme, cumin, salt, pepper and parsley in a large bowl. Blend well. Make thin patties and fry like a hamburger in heated skillet; drain off grease.

Some people split the pita bread to make a pocket, some just fold it in half like a taco and others lay in flat on a plate, pile on the meat, fresh sliced tomatoes and thinly sliced raw onion, top the whole thing with Tzatziki sauce and eat it with a knife and fork.

OR you can pile the whole lot into a meatloaf tin and bake as you would for meatloaf. It’s easier to carve into thin slices then.
