Pork with Egg and Lemon Sauce

Pork with Egg and Lemon Sauce (Hirino me Avgolemono)

2 oz. butter
2 lb. leg of pork, cubed
1 bunch spring onions (scallions), finely chopped
1 tbs. plain flour
Salt and pepper
1 Tbsp parsley, chopped
1 pint chicken stock
3 egg yolks beaten
2 cos lettuce, blanched, drained and chopped
Juice of 2 lemons
1 tbs. parsley chopped


Melt butter and fry pork in it until sealed but do not brown. Add spring onions and thicken with flour. Season well with salt and pepper then add parsley and mix well. Pour in stock, enough to cover and then simmer for 40 minutes.

Chop cos lettuce into large sections and add to pork. Add juice of lemons to egg yolks and beat well.

Take some of hot stock and add to egg mixture; mix very well. Take pork off heat and allow to sit for a minute. Add egg mix to pork slowly and stirring all time. Cook over a low heat, stirring, for 1 minute and then serve.
