Rabbit in Vinegar (Xithado)
1 rabbit cut into portions and skinned or 1 chicken, cut into serving sized pieces
2 lb onions cut into rings
1 tsp sugar
1 glass, 6 to 8 ounces, red wine vinegar
1 tbs tomato puree
1 tsp cinnamon
2-3 bay leaves
Hot water to cover
Olive oil for browning and sauting
Brown rabbit in oil all over in a frying pan and set aside in a casserole pot.
Fry onions in olive oil until very brown and starting to caramelize.
Add 1 teaspoon of sugar and they will caramelize faster.
Put onions into casserole dish with rabbit.
Add red wine vinegar, tomato puree, cinnamon and bay leaves.
Add enough hot water to cover, mix well.
Bring to boil and then simmer for 1-1 1/2 hours.
