Rice and Vermicelli (Rizi Me Fithi)
2 oz butter
1 oz vermicelli
12 oz basmati rice - washed
Salt and pepper to taste
1 tsp lemon juice
1 3/4 pints water or stock
Melt butter, add vermicelli and brown well.
Add rice and mix in very well; season with salt and pepper.
Add 1 teaspoon of lemon juice and stock; mix again.
Bring to boil, cover and simmer for 15-20 minutes until rice is cooked.
