Taramosalata (Fish Roe Salad)

125 g/4 oz smoked cods roe
Juice of 1 or more large lemons
2 large slices of white bread, crusts removed and soaked in water
75-125 ml/3-4 fl oz olive oil
1/2 small onion, grated and drained

Skin roe and put in a food processor or blender with lemon juice. Squeeze bread dry, add to mix and blend well. Slowly add olive oil until mix is consistency of mayonnaise. Mix in onion at end and add more lemon if wished.
