Lamb with Spinach
Olive oil
2 lb lamb cut into large cubes
1 large onion, finely chopped
2 cloves garlic, chopped
2 tbs tomato puree
1 cup red wine
1 tsp sugar
1 tsp ground cinnamon
1 1/2 lb spinach, washed
Juice of 1 lemon
Fresh parsley, chopped
Saute lamb in olive oil until browned. Add onion and fry that for a few minutes then add garlic and fry until softened. Mix in tomato puree, add wine, sugar and cinnamon. Mix very well, cover meat with hot water or vegetable stock, cover and simmer for one hour.
Add spinach, season well with salt and pepper. Add juice of one lemon and cook for 5 minutes. Add parsley and serve with rice.
