Greek Style Okra with Tomatoes
1 Okra lb. small, fresh
Salt and pepper
1/2 cup vinegar
Olive Oil 3/4 cup
2 Onions medium, peeled and chopped
1 Tomatoes lb. fresh, or canned
1/2 cup vinegar
Trim cone shaped tops from okra, wash, drain and place in a dish. Sprinkle with salt and vinegar and set aside for half and hour. Wash okra again and then dry thoroughly.
Heat olive oil in a large frying pan and add chopped onion. Cook gently until onion is tender. Add okra and cook, tossing lightly, until they are slightly browned. Add tomatoes, peeled and chopped, salt and pepper. Cover frying pan and simmer for about 45 minutes, or until tender.
