Bionicgal's Mothers Chocolate Carmel

On July 6, my mom went in for evergency gall bladder surgery.........they simply opened her and closed her back up...........she was full of cancer. My sis and I cared for her at her home until she passed away on August 30. This recipe is on she always made for us at Christmas..........in fact it didn't matter what the calander said, it wasn't Christmas unless we had this to eat.

CHOCOLATE CARAMEL

2 cp sugar
1 cp corn syrup*
2 cp whipping cream, divided
1 cp butter {not margerine}
2 heaping Tblsp cocoa
1 Tblsp vanilla
nuts if desired

Bring sugar, syrup, butter and 1 cp whiping cream to a boil. While boiling add remaining whipping cream. boil until it forms a firm ball in COLD water {approximately 244* to 246* F}. Remove from stove and beat in cocoa, vanilla and nuts. Pour into buttered 9" X 13" pan. Allow to cool.

* she usually used white corn syrup but said the dark would work as well.
