Joanne's Mother in law's Rice Pilaf

My mother in law has been gone 20 years this year. I didn't have a chance 
to really get to know her as well as I would have liked as she passed away 
shortly after our first anniversary. She was part Lithuanian and she made 
the best rice pilaf I have ever had. Even though she gave me her recipe 
and all her hints, I still cannot make it the way she did. But I would like
to post her recipe for 

Rice Pilaf 

8 oz pkg very thin egg noodles, broken into small pieces 
2 tbs butter 
2 tbs olive oil 
2 cups Uncle Ben's Converted rice 
4 1/2 cups chicken broth ( she used to add a tbs of chicken paste bought in a specialty store to the broth) 

She used a cast iron dutch oven . I do also. Melt the butter in the dutch 
oven and add olive oil. Add the broken egg noodles and brown them stirring 
frequently. 

When they are nicely browned add the rice and mix well. Add the chicken
broth and bring to a boil. Then cover and remove to another burner which 
is already heated on very low. Let cook for 20 minutes. Remove from heat 
and let stand 10 minutes. Fluff with fork. serve and enjoy. 

Well this makes me feel better having posted these in memory of these 
women who had such influence on me. I really like this section of the board
