Mexican Casserole

4-5 flour tortillas
1 pound ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 envelope dry taco seasoning
1 (8 oz.) can tomato sauce
1 can (6 oz.) can tomato paste
1/2 cup sliced ripe olives
1/4 cup water
1/2 tsp. chili powder
1 cup sour cream
2 eggs
1/4 tsp. pepper
2 cups broken Frito corn chips
2 cups shredded Monterey Jack cheese


In microwave safe bowl crumble the ground beef and add onion and green pepper. Microwave on high 3-5 minutes or until meat loses pink color. Stir and drain. Mix in taco seasoning,tomato sauce and tomato paste, olives, water and chili powder.

Microwave on medium (50% power) for 10-15 minutes or until thickened. In separate bowl, blend sour cream, eggs and pepper.

Now place 2 tortillas on bottom of 8 inch sqaure microwave glass pan. Top with half the meat mixture followed by half the sour cream mixture. Repeat layers.

Sprinkle with corn chips and cheese. Microwave at 50% power for 10 - 15 minutes or until cheese melts. Let stand 5 minutes and then cut and serve.
