Mexican Meatloaf

Mex Meatloaf

2 lb. lean ground beef or 1 lb. beef and 1 lb. Turkey
2 lightly beaten eggs
1 small onion
1 cup dry bread crumbs or 2 slices bread
1 1/2 cup grated cheddar cheese, divided
1 1/2 cup salsa, divided
3 slices bacon
Salt and pepper to taste


Reserve 1/2 cup of cheese and 1/2 cup salsa. Combine all ingredients. shape into meatloaf and place in large baking pan . Bake at 350 degrees for 1 1/2 hours or until done. 1/2 hour before it is done drain off grease put Bacon , salsa, and cheese on top. Bake for 1/2 hour more. Makes 6 to 8
