2 pounds ground beef
1/2 cup chopped onion
1 envelope taco seasoning mix
1/2 cup water
16 ounces refried beans
12 soft corn tortillas
8 ounces tomato sauce
8 ounces taco sauce
2 cups shredded Cheddar cheese* see note
4 cups shredded lettuce
1 large tomato -- chopped
1 cup shredded Cheddar cheese


Brown ground beef in skillet, stirring until crumbly; drain well. Add onion, taco seasoning mix, water and refried beans; mix well. Simmer for 5 minutes, stirring occasionally.

Spoon onto tortillas; roll each to enclose filling. Place seam-side down, in a greased 9x13-inch baking dish.

Mix tomato and taco sauce in bowl. Spoon over the tortillas. Sprinkle with 2 cups cheese. Microwave on High for 10 minutes or until heated thru.

Sprinkle with lettuce, tomato and cheese.

Serves 6
