Green Chile Burros

2-4 cups cooked shredded beef roast
1 cup beef broth from roast
1/2 small onion chopped
1 (4 oz.) jar or can of green chiles, chopped
1 (16 oz.) can stewed tomatoes
1 clove mince garlic
cornstarch and water for gravy
12 flour tortillas


Saute onion and garlic in as little oil as possible. Add to beef broth and simmer 10 minutes. Add all other ingredients except tortillas. Simmer approx. 30 minutes or till thick.

Put 2 heaping teaspoons of meat mixture on each tortilla, fold ends of tortilla and roll up. These may be eaten plain or deep fried a few moments. Serve with sour cream and grated cheddar or Monteray Jack cheese or both.
