Horchata

is refreshing sweet rice drink and is wondeful. It is so popular in Mexico that there are store fronts that open just to sell this drink.

2 cups white rice (raw)
4 cups cold water
2 (4 inch) cinnamon sticks (broken into many pieces)
2 cups milk
6 T sugar


Soak rice in 3 cups of water for 3 hours.

Crumble cinnamon sticks into a skillet and pan fry it to toast it so the oils are released.

Drain rice (throw water out) and add the cinnamon and milk. Put it in a blender and blend it well. Strain it and save milk mixture and solids in separate bowls.

Add the sugar to the 4 cups of water and mix well. Add the solids to the water mixture and
blend again in the blender until it is well blended. Strain the mixture again and mix that water mixture in with the milk mixture. You can throw out the solids now. Chill completely before serving.
