Sesame Seed Drink – Horchata de Ajonjolí
This recipe is from Puerto-Rica
Makes about 1.75 litres
300 g sesame seeds
1 lt hot water
1/2 lt cold water
250 g sugar
Mint leaves and lemon slices
Wash the seeds and soak in water for 2 hours. Drain and grind them finely. Add the hot water to the ground seeds, then drain them through a fine cloth and squeeze out all the sesame seed “milk”. Add the sugar and stir until dissolved, add the cold water and chill in the refrigerator.
Serve very cold with a garnish of fresh mint leaves and a very thin slice of lemon.
